Raclette which is pronounced “ruck-lett” in English is a dish type and cheese type. The dish is made up of a melted cheese that is traditionally served with small gherkins or pickles, pickled onions, and boiled potatoes.
The technique on how the cheese is melted for making raclette has undergone changes over the years. Many years ago, the cheese was first melted close to a fire, but today most people use Raclette grills for making these meals.
Origins Of Raclette

The Traditional Raclette Recipes
If you are interested in making a traditional raclette dish, or you are interested in trying out the cheese, it is highly recommended to use the raclette cheese that comes from Switzerland. More specifically, make sure the cheese originates from the Swiss Alps in the alpine villages. Below is a traditional raclette recipe:
- 8 to 10 small to medium potatoes
- 750 grams of Raclette Cheese
- 4 to 5 thinly slices Buendnerfleisch which is an air-dried beef that comes from the Swiss Alps (optional)
- A jar of small pickles or gherkins
- A jar of small pickled onions
Wash the potatoes, leaving the skins on and place them into boiling salted water. Boil for around 20 minutes or when the potatoes are cooked through. When they are ready to drain the water and put them aside in a covered container.
The next step involves arranging the air-dried beef, pickles and pickled onions on a platter or on individual plates, topping the arrangement with the potatoes.
Now heat a Raclette grill and wait for at least 5 minutes. If you do not have a Raclette grill then purchase one here at the official Party Grill website. While you are waiting for the grill to warm up take the rind of the cheese off and cut the cheese into thin slices before placing them into your pan. Now slide the pan under your Raclette grill. If you are looking for a creamy and soft consistency melt the cheese for around 2 minutes, for a consistency that is crispier melt the cheese for around 3 minutes.
Now remove the cheese by scraping it up using a wooden spatula and transfer the cheese over the potatoes. Season the top of the dish with paprika and pepper. Make sure you serve the dish immediately.
